What is Pachamanca?

Pachamanca is a traditional Peruvian cooking method dating back to Inca times. Meat (lamb, pork, chicken) and potatoes are marinated with Andean herbs and spices, then cooked to perfection in an underground oven heated with hot stones. It's a true feast that combines food with ancient Andean traditions.
